Pineapple Salsa

I saw this and I just had to make it because it’s so cute – putting the salsa in the pineapple!! The ingredients make two pineapple bowls. I also didn’t include the core into my salsa; I saved the core for my smoothie ingredients.

  • 1 pineapple
  • 1 seedless cucumber, diced into tiny squares
  • 1 bell pepper, diced into tiny squares
  • 2 TBS fresh cilantro, chopped
  • 1 jalapeno pepper, seeded and chopped
  • 1 garlic clove, minced
  • 1 tsp fresh lime juice
  • Salt & pepper to taste

Clean the pineapple then chop in half. You will be using the bottom half.

For the upper half, it is easy to dice the pineapple into tiny squares but for the bottom half it’s difficult. Cut around the edge and then just lever it out. The bottom half doesn’t have to look pretty because you’re going to put the salsa in there.

Mix diced pineapple, diced cucumber, diced bell pepper, cilantro, jalapeno, garlic, and lime juice then place half of it into the bottom half.
