Shrimp & Fava Beans


It’s been forever since I’ve seen fava beans at Whole Foods. If they didn’t have fresh ones in the pod, they would at least have frozen ones in the 365 packaging but that stopped a year ago or more.

I saw fresh fava beans today and I was so happy! I love fava beans!

[100% organic & wild]

  • 3 scallions, sliced, divided in thirds
  • 1½ lbs fresh fava bean pods, pods removed
  • ½ lb shrimp
  • Salt & water
  • Canola oil

Heat 1 TBS canola oil on high heat in a wok. Add the fava beans with one third of the scallions. Add salt and some water to cook until soft. Remove from heat.

Add 1 TBS canola oil on heat heat in the same wok. Put the shrimp and the remaining scallions into the wok and add salt for taste. Cook shrimp until opaque and add the fava beans for 30 seconds. Serve with rice.
