Mango-Avocado-Tomato Bites

I couldn’t think of a name for these really easy-to-make appetizer/finger food. You can put ANYTHING in the dumpling wrappers, sweet stuff, salty stuff, fruit, salsa, whatever…

  • 5 plum tomatoes, chopped
  • 5 avocados, chopped
  • 1 large mango, chopped
  • 1 lime, juiced
  • Olive oil
  • Salt & pepper
  • Chinese dumpling wrappers/skins
  • Butter, melted
  • Cooking oil spray

Preheat oven to 430ºF. Dice and chop all the tomatoes, avocados, and mango. Combine in a mixing bowl, drizzle with a bit of olive oil, add in the freshly squeezed lime juice, season with salt and pepper then set aside.

Spray a mini muffin tray and place one dumpling wrapper in every space. Using a brush, butter each wrapper. Place muffin tray into oven and cook for 8-10 minutes. Take crispy dumpling wrappers out and add a small spoonful of the mixture into each cup. Remove from muffin tray and set on serving plates.
