Roasted Cinnamon Pecans

You know at Whole Foods the really good nibble food are always so expensive! Roasted nuts for $22/pound, and chocolate truffles for $2.99 each, etc… I woke up this morning feeling “toasty”. It’s because I left the heater on at a higher setting than what I usually set it to.

[100% organic]

  • 1 egg white
  • 1 tsp water
  • 1 cup pecans
  • ¼ tsp salt
  • 3 TBS white sugar
  • 3 TBS brown sugar
  • 1 TBS ground cinnamon

Preheat oven to 275ºF. Beat the egg white and water until foamy. Add the pecans, and shake until well coated. Mix the brown sugar, white sugar, salt, and cinnamon in another bowl, then sprinkle over the nuts. Shake and mix well, then spread the pecans over a sheet tray with parchment paper. Roast the pecans for 1 hour, flipping every 20 minutes.

Note: you can use almonds, walnuts, and any kind of nut. I’m going to make it with mixed nuts and dried fruit next time – just to try.
