Patate Fritte with Parmigiano Reggiano

I love the fries at Enoteca Vespaio! Enoteca is one of my favorite restaurants in Austin and I used to go every week but since two summers ago, they raised their prices and decreased portions. I would always get the fries if I ordered their pizzas or panini.

For some reason, I was salivating for them this morning so I decided to make them. Unfortunately at Whole Foods, the mean guy at the cheese counter said that they didn’t have Grana Padano so I bought Parmigiano Reggiano instead.

[100% organic]

  • French fries (self-made or store bought)
  • Chopped flat leaf parsley
  • Salt
  • Parmigiano Reggiano, freshly grated

Deep fry the french fries. Pat dry the fries with paper towels. Season with salt and top with chopped parsley and freshly grated Parmigiano Reggiano.
