I’m having a very weirdly acting sweet tooth today. First these cookies, and now a chocolate caramel tart. Look for that later, most likely tomorrow because it takes such a long time to make.
- 3 large, ripe bananas – well mashed
- 1 tsp vanilla extract
- ¼ cup unsweetened apple sauce
- 2 cups rolled oats
- ⅓ cup pumpkin seeds
- ⅓ cup flax seeds
- ½ tsp cinnamon
- ¼ tsp fine grain sea salt
- 1 tsp baking powder
- 1 cup dark chocolate chunks
Preheat oven to 350ºF. In a large bowl combine the bananas, vanilla extract, and apple sauce. Set aside.
In another bowl whisk together the oats, pumpkin seeds, flax seeds, cinnamon, salt, and baking powder. Add the dry ingredients to the wet ingredients and stir until combined. Fold in the chocolate chunks. Drop tablespoon-fulls onto a cookie sheet. Bake for 15-20 minutes. Allow to cool and serve.
