Noodle Covered Green Beans & Minced Pork

This special way of cooking brings out all the natural intense flavor of the green beans and minced pork through the noodles.

Ingredients:

  • ¾ lb green beans, ends removed, halved
  • ½ lb minced pork
  • 2 green onions, thinly sliced
  • 1 TBS ginger, diced
  • 6 TBS soy sauce (I use 40% less sodium)
  • 2 TBS brown sugar
  • Pinch of salt
  • Chinese noodles (depends on how much you want to eat)
  • 2 TBS canola oil
  • 2 drops of oil
  • Water

Instructions:

  1. Cook the noodles in a saucepan of boiling water with the 2 drops of oil until the noodles are half cooked. Make sure the center is still hard. Drain well and return to pan to keep warm
  2. In a frying pan, heat 1 TB of oil on high heat, then add the ginger and half of the green onions with the minced pork
  3. Add the sugar, salt, and 4 TB soy sauce over the minced pork. Cook thoroughly for 4 minutes and mix/toss/stir
  4. Remove minced pork and put aside
  5. In the same frying pan, add 1 TB oil and cook the green beans and remaining green onions
  6. Add remaining 2 TB soy sauce and cook for 1 minute
  7. Layer the frying pan: green beans on the bottom, spread the minced pork over the beans, then put the noodles on top of everything
  8. Add water so that the water level is just below the noodles
  9. Cook uncovered until all the water has almost evaporated
